What is Za’atar and how do I use it?
Okay, so maybe I was super late to the party here, but I only found out about the wonders of Za’atar last year. I am trying to remember whether that was through Ottolenghi, or whether it was based on my research. I ended up finding some in my local supermarket (it is easier to come by than you think!) and used it.
I was so surprised with all the delicious flavours, it is like a herb mixture of dreams. Full of earthy flavours from toasted sesame seeds, sumac and I also hint some sage and thyme in there. I sprinkle it on anything that needs a real boost of flavour and, I’m not shy with it either.
Za’atar is a middle eastern culinary herb of basically a mixture of herbs all mixed in one. It is so delicious and can be used on so many things, on top of pasta, soup, even just bread dipped in some olive oil and topped with Za’atar. Dreamy!
Trust me, it is a pantry essential and one you will always have at hand especially for dishes that need a little something special but you aren’t sure what. Za’atar will usually fill that gap for you!
How to Make this Za’atar Vegetable Traybake with Sausages
Remember when I said you just throw everything onto a tray? I meant it. Line your oven tray with foil or baking paper, add on the potatoes, sliced bell peppers and sliced red onion. Make sure they are evenly spread out.
Pour over the olive oil and, using your hands or a spatula, mix the ingredients around until fully coated in the oil. Sprinkle ½ tablespoon of Za’atar over the top and cook for forty minutes until the potatoes and vegetables have softened. Remove, add the sausages and cook for a further 20 minutes.
Remove and sprinkle everything with a touch of sea salt and freshly ground pepper, can never skimp on this for that extra burst of flavour! Spoon into your favourite bowl and enjoy.

Traybake Za’atar Vegetables with Sausages
- 500 g New potatoes
- 8 Lean sausages
- 2 Bell peppers, sliced into strips
- 2 tbsp Olive oil
- 1/2 tbsp Za'atar
- 1 Red onion, peeled and sliced
- Preheat the oven to 180C (356F) fan.
- Line a large oven tray and add the new potatoes, sliced onion, sliced peppers and olive oil. Mix using your hands or a wooden spoon until all ingredients are coated.
- Sprinkle the za'atar over the top. Place in the oven for 40 minutes.
- Remove, add the sausages and place in the oven for a further 20 minutes.
- Remove from the oven, add salt and pepper if necessary and enjoy.
