Welcome back to another post on my HOTW – July 4th 2021, also known as my highlights of the week!

Hi everyone! Happy 4th of July to those who celebrate it! When I lived in America for a year, I was lucky enough to be there for two 4th of July and had the BEST time. It sure does take me back!
As you all know, I came back from Wales this week and I am buzzing to share what we got up to. We had the best time, we go on a holiday once a year and make sure to always set time aside for it. This years destination was Rhos-on-Sea in Wales and talk about scenery! It is so scenic! We stayed in the most beautiful cottage right opposite the sea!
We managed to pack so much in in only four days! I will share my absolute favourites. We visited this town that was purposely designed to look like Italy, it was crazy. It was almost like we had taken a flight straight to Rome, so strange! It was worth it though, and we ended up going into what felt like the Amazon Rainforest, it was pouring with rain literally in the middle of the forest. SO scenic and dreamy, although I looked like a drowned rat by the end of it.
Next up was a seaside town called Llandudno, it felt like it was stuck in the 70s. We noticed there were Alice in Wonderland figurine statues and references all over the town. Turns out there was a loose connection there, apparently Alice was based on a girl who used to spend her holidays there, how bizarre! The views from the pier and the top of the park were beautiful.
Turns out we couldn’t have picked a better day to go as they had a Mercedes car display right by the sea and all these people came along with their Mercedes from the oldest models to the newest, it was quite something!
We also went to the beach around Anglesea and, the girls had a swim in the sea. Not me, I lay on the sand instead (way too cold for me!) and had the best time! Never felt more relaxed, although burnt my ankles so badly they ended up looking like red socks. Not the best look I won’t lie.
Those were my three absolute highlights of the trip, had the best time and laughed my head off. Here is a pic of the four of us, starting from the left me, Tabby, Jane and Laura.

Providing you with all the goods this weekend, with these two ultra-refreshing recipes. If you have been reading my previous HOTW you will know that I have been loving all the Summery recipes, this week has been no different. This orzo salad with chicken and bacon is the perfect meal to quickly rustle up that always hits the spot.
Enjoy a sweet treat made healthy with this homemade raspberry frozen yoghurt. Absolutely delicious, slightly tart with a subtle sweetness. A taste of this will cool you down on the warmest days and put a big smile on your face (I guarantee it!).
Favourite Recipe this Week
The perfect Summer meal if you are looking for something with a real kick. These baked cauliflower wings with blue cheese sauce are so special and one of the most visited recipes on the blog! The homemade blue cheese sauce is so cooling and the wings are seriously the best. One NOT to be missed!

Laura showed me the band Smith & Thell on the six-hour drive down to Wales, absolutely love them and I’m obsessed now. Their music is really good, definitely recommend giving them a listen!
Don’t judge me on this one but I am loving the new Jeremy Clarkson Farming series. I do not like him and think he used to come across as a little unpleasant, however, the series is hilarious. Of course, it is all made for TV but I have a newfound respect for farmers and the stuff he gets up to is guaranteed to make you giggle.
Also, watched Moana. The Disney movie? SUPER late to the party and can’t believe I hadn’t watched it before but absolutely LOVED it! It’s probably my favourite Disney movie, and that’s quite a statement!
