Welcome back to another post on my HOTW – July 11th 2021, also known as my highlights of the week!

How have things gotten so BUSY from one week to the next? After a year of pretty much no plans, now things have eased massively it seems like normality has boomed and, suddenly everything is so busy? Thinking back to the COVID period, although I would never wish for that again, the chance of slowing down was almost like a blessing in disguise. Prioritising yourself instead of rushing around like a headless chicken trying to keep your head above water. Well, I’ve literally described myself there. Happy days!
Definitely prioritising cooking, it is the one thing that makes me switch off completely. I wander into the kitchen after a long day, play a podcast or listen to the radio and I am just in my own wee world. Wish this could happen every night to be honest, but lately only seems to be a few times a week (at best!). Hopefully can start doing it a bit more once this crazy rush settles (will it ever?). Is it just me or was this always what life was like (not that I am complaining either!)?
This weekend I was in Edinburgh with my auntie Allyson and Uncle Miles. As always here, made some cracking cocktails that are hard to beat. You should see their drinks cabinet, it is like a full-fledged bar! Having a riot as always and lots of laughs!
You all seemed to love the Wales post from last week and, the pictures made me so happy to share that with you all!
What’s Cooking in the Kitchen?
This week, sharing two recipes that will get your tastebuds singing. Starting it off with this Za’atar vegetable traybake with sausages. Delicious roast vegetables and potatoes topped with plenty of Za’atar and scrumptious sausages. A hug in a bowl at its very finest without all the hassle. A one oven tray wonder!
Next up is this salmon pasta salad with avocado. I’m loving a pasta salad at the minute, whether it be served warm or cold, I am here for it. The best bit is experimenting with all sorts of different ingredients and, these work a charm together. Soft salmon with delicious pasta, pumpkin seeds, freshly chopped basil, avocado and cranberry cheese. Seriously, what more could you want?
Favourite Recipe this Week
The only crumble that owns my heart… Blackberry and nectarine crumble. It is sweet with a sharpness from the blackberries and, the sweet crumble on top is just to die for. This is my go-to dessert, especially good to make in advance!

Free Time Loving
So I finally gave Grace Dent’s podcast a listen and absolutely love it, such a relaxing and fun listen. Such a good concept too, all about food and what people’s favourites are!
I watched TWO fab things this week and would highly recommend both of them. Firstly the one that shocked me the most as I had never heard of her? Talks about Belle Gibson, one of the OG influencers who grew her online following by stating she had cured her terminal brain cancer through diet and ‘wellness’. No spoilers here because it is the first thing mentioned but, the whole thing was a lie. You have no idea the fame, awards, money and publicity she was receiving for all this and then she was found out. Rightfully lost everything and well, think she has turned to Islam now. It’s a crazy story and, recommend you watch it.
This next one didn’t shock me as much as I read so much about it at the time it happened. Does anyone remember the Peru Two? You know those two girls who tried to smuggle a fortune worth of drugs from Lima to Ibiza? The documentary ‘High‘ on BBC tells the story of Michaela Mccollum. You’ll probably know her best as the Irish girl who had that huge doughnut bun on her head. Well, the story fascinates me every time and, I am sure will do the same for you. Still can’t figure out whether I pity her, feel sorry for her or think she was just plain stupid and naive. To give her credit, she was her own worse critic throughout the whole thing documentary.
